Palak paneer

Palak paneer :


The most delicious recipe out of spinach is a combination of spinach with paneer that is palak paneer which goes best with paratas, naan , rotis or kulcha. 

When it comes to palak, most of us do not prefer to go for it. But palak is the most nutritious vegetable since its rich in iron, calcium, potassium, magnesium so it's very good for the growth and development in children as well as in maintaining a healthy body with strong immunity.

I have prepared palak paneer twice, in one recipe I have just blanched palak leaves and grinded and added in gravy consisting of onion/tomato and spices. However here the spices added come in between your tooth and it's so uncomfortable. Also the gravy becomes very less.

So I tried to make it another way in which I have grinded everything I saute like onion, tomato, spices and grind along with blanched palak leaves and make a gravy. In this method you get all the flavours of spices mixed up in your gravy and also you get the perfect consistency and volume to your gravy. So in this post I have posted this method below which you can try out!

Ingredients and method:

Step 1:

Wash spinach/palak leaves in running water. Then boil water. Add these palak leaves. Keep for a minute. Then remove and place them in a bowl with cold water. This procedure retains the green color of palak which gives the perfect green color to your final recipe.

Remove the palak leaves from cold water after a minute and put them in mixie jar. Add 4-5 garlic cloves, 1 inch ginger and 3 green chillies. Do not grind now. Just keep aside.

Step 2:

Heat a pan. Add 2 tsp of butter and 2 tsp of oil. Add 1 tsp of jeera, 1 bay leaf, 1 green cardamom, 1-black cardamom,1 cinnamon, 2 cloves. Saute well.  Add 2 onions long slitted and saute till light pink. Then add roughly chopped tomato-1. Saute well. Do not make the onion brown. Cool. 

Add all this sauted things (except bay leaf) from pan to mixie jar of step 1 and grind everything to a smooth paste. Add water if required.

Step 3:

Heat the same pan again, add some butter and oil and Saute paneer pieces till light brown on all sides. Remove in plate.

Step 4:

Then in the same pan put the grinded green paste of step 2. Saute the paste well in butter. Add 1 tsp each of coriander powder, red chilli powder, garam masala, salt, sugar, and half cup of milk. Let the gravy boil. 

At last add fried paneer from step 3. Boil and done. Add 2 tsp of ghee on top. Mix. If u have cream then add on top. Otherwise it's ok. Your delicious palak paneer is ready!!


Serve hot with naan/kulcha/parata/roti.

    1. I have used about 200gms(1 bowl approx) of paneer cubes, easily available in packets. You can try amul or milky mist paneer cubes.
