Kelyachya panacher patolyo ( Patolyos on banana leaf):



Patolyos are the Goan traditional festive  dish prepared on the occasion of festivals like Nagpanchami, Shravan month, Ganesh Chaturthi etc. 

In my previous post I have shared with traditional method of preparing patolyos on turmeric leaves whose link I have shared below.

Whereas today I have tried a different method as I used banana leaves to make my patolyos. Also i have varied with my flour, here I have used a mixture of wheat flour and rice flour.

Do you know the benefits of banana leaf? In ancient times till today at some homes,  temples or at cultural festivals, the food is served on banana leaves. Food is also served on banana leaves and offered to dieties during festivals. Even towards the South of India, an entire thali can be incorporated on a banana leaf as it very big in size. 

The aroma and flavour of banana leaf is absorbed in your food and it's tastes more delicious since it adds subtle and earthy flavours to the dishes that are served on the leaves.

Besides there are also health benefits of banana leaf. Banana leaf has lot of nutrients and food served on banana leaves absorb all these nutrients. 

Additionally, the food served on banana leaves absorb the polyphenols which are said to prevent many life style diseases. They are also said to have anti- bacterial properties that can possibly kill the germs in food.

Also banana leaves have a wax like coating that prevents dirt and dust from sticking on the surfaces of leaves. So a banana leaf can be considered to be an hygienic and eco-friendly option.

Let's go to the recipe:

Ingredients and method:

For the flour:

Take 2 cups of rice flour and 2 cup of wheat flour, add a tsp of salt and a tsp of baking soda. Mix everything dry. I have added soda here since I have used wheat flour and to make my patolyos soft. 

Heat a vessel, add 3 and half cups of water. Let the water boil. Once it boils, reduce flame, add the above mixture of flour slowly stirring and mix immediately taking care not to form lumps of flour. Once u mix, close with a lid for just 2 mins. Off the flame.

Transfer the hot mixture on a big plate or parat. Then with a masher mash everything well. Add 2 tsp of oil to a laddle or spoon and mix everything. Then with your oil greased palms knead the dough. It should be very soft.

Your dough is ready.

Then you make the coconut jaggery mixture as shown in my earlier post whose link I have given above. This is the filling of patolyos. 

Wash the banana leaves and cut them according to the size needed. I have kept few big and few small as per the leaves received.

Then spread a small portion of dough on the banana leaf, put the coconut jaggery filling on one side and fold the leaf. This way prepare the filled banana leaves patolyo. 

Meanwhile fill your steamer with water and let it boil, then place the filled banana leaves patolyo inside and steam it for 20 minutes. Open and check , the leaf will change color , will look cooked. Then off the flame.

Keep it closed for few minutes for the flavours to get absorbed. 

Your banana leaf patolyo are ready to serve.

Serve hot.

You will see that your patolyos will have the beautiful aroma of banana leaf and will taste awesome. Also the texture will be too soft.
