Veg Makhanwala:
When it comes to restaurant style dishes slightly towards less spicy and comfortable for your kids too to relish, the first dish which triggers our mind is the makhanwala dish. It could be paneer makhanwala or veg makhanwala. Makhan means butter. So it's sometimes written as paneer butter masala or veg makhani.
Yesterday I bought a packet of Suhana Paneer Makhanwala instant spice mix. I usually use this to prepare paneer makhanwala. Whereas today I tried to use this spice mixture as well as add some of my own innovation and few mix vegetables to prepare veg makhanwala dish. You can add onion+cashewnut grinded mix if you do not have suhana spice mix powder.
For this dish I chose to incorporate 5 main ingredients-carrot, beans, capsicum, green peas and paneer. The veggies I had already bought to prepare pulao and the remaining ones were lying in my refrigerator. So thought of using them to prepare this lip smacking dish for breakfast to relish with chapati. You can choose to eat at lunch or dinner.
So let's go to my recipe
Ingredients and method:
Paneer-200 gm ( usually I use milky mist paneer cubes which come in packets)
1 carrot, 1 capsicum, 6-7 beans, a bowl of frozen green peas.
1 onion finely chopped
2 tomatoes made into puree
Few coriander leaves
Few kasoorimethi strands
Butter -4 tsp
Oil-2 tsp
Masalas-jeera powder, coriander powder, kashmiri red chilli powder, red chilli powder and garam masala.
Sugar-1 tsp
Salt as per taste
Suhana Paneer Makhanwala spice mix powder or paneer butter masala powder
Method:
Heat a pan, add oil, half of butter. Add finely chopped onions. Saute well. Then add carrot chopped in long slits, beans chopped into medium pieces, capsicum chopped into small squares, frozen green peas. Saute all vegetables well till they are half cooked. Then add paneer. Saute well.
Once the veggies are done, add masala powders-1 tsp of jeera powder, 2 tsp of coriander powder, 1 tsp of garam masala and 1 tsp of kashmiri red chilli powder and a tsp of red chilli powder for slight spicyness.
Saute well. Keep the veggies at sides of the pan and add tomato puree in the centre. Saute tomato puree slowly.
Make a paste of Suhana Paneer Makhanwala spice mix with milk. If you do not have this spice mix with you, you can saute a long slitted onion and few cashewnuts on medium flame in butter, add paneer butter masala powder 2 tsp and cool and grind to paste and add.
Add this paste in pan above. Stir everything slowly well. Add salt and sugar. Close and let it get a good boil.
Add kasoorimethi crushed to your palm, chopped coriander leaves and remaining 2 tsp of butter. Stir slowly and off the flame. It's done.
Keep standby for few minutes.
Serve hot with parata/naan/ roti/puri/chapati/kulcha.
