Sungta ghalun bharilli vaingi ( stuffed baby brinjals with prawns)






Hello everyone, 

Which recipe hits your mind when each one of you see fresh attractive  baby brinjals in the market?


 Everyone would answer 'ofcourse stuffed brinjals'. Yes that's true!! Even with me it happens the same. So I decided to prepare a new version of stuffed brinjals this time. 

And here am sharing with you all my newly tried recipe of an unique combination of veg (brinjals) with nonveg (prawns) resulting into a lip smacking dish, and i.e stuffed brinjals with prawns. 

Many of us must have already prepared stuffed brinjal recipe in veg version using different recipes of various states in India. Each state has different blend of their spices and masalas which result into a unique recipe of stuffed brinjals in every area. I too have made a variety of stuffed brinjals using different kind of masalas and their combinations which you can have a look in my blog under label stuffed dishes or just type brinjal in the search. 

Today I shall share with you an unique recipe of stuffed brinjals wherein I have used the blend of all 3- Maharashtrian, North Indian and Goan masalas. Yes their blend of masalas delivered an outstanding flavour to the dish. I have mentioned below their names. This is not in context of  favouring any company nor advertising their products, but as a genuine buyer of different spices and masalas from different outlets and  loving to try out different recipes, I am sharing with you the images of their masalas which I have used in my recipe for your easy reference. 


I have not roasted any spices in this recipe, just used ready masalas. So if you don't have any spices at home but have purchased these masalas from any outlets you can just go ahead with this recipe. The result is mind-blowing, the taste beats a chicken masala recipe. With respect to masalas, I purchased them at one of the consumer shopping exhibition held at my place. You can too or at any other grocery outlet. 

So here are the images of masalas used in my recipe. 




So let's start with my recipe. 

Ingredients and method:

Step 1

Clean around 10-15 medium sized prawns. Apply 1 tsp salt and keep aside. 

Step 2

First dry roast 1 cup of coconut on pan along with 4-5 cloves of garlic and 1 inch ginger.

Add 2tsp  Pravin Suhana kanda lasoon masala and 2 tsp of goan garam masala of any brand (I have used chanekar garam masala). Grind with 1 cup coriander leaves, few pudina leaves (6-7) with little water.

Step 3 

Heat a wok or kadai. Add 2tbsp oil, 3 chopped green chilli, 4-5 chopped karipatta leaves,saute then. Add 3 big finely chopped onions. Saute well till color changes to pink.  Add 1 chopped tomato. Add 1tsp each of haldi powder, red chilli powder, salt. Add washed prawns and mix . Add mixer grinded masala. Saute. Add little water, close with lid and let prawns cook. 

Take whole packet of Sawai lal vatan masala in a bowl and make a paste with half cup water.

Then add this Sawai lal vatan masala and 2 tbsp of Everest mutton curry masala.  Saute well in the mixture. 

Add little water. Cover and cook. Check for salt if needed since such ready masalas always contain little salt in them. 

At last add few chopped coriander leaves. Off the flame and cool the masala.

Now your masala is ready.


Step 4

Filling the brinjals

Wash your brinjals and give 2 slits vertically diagonally half done. In each brinjal, stuff 2 prawns from the masala in centre and then remaining masala in all 4 sides and in between.


Fill all your brinjals. Keep extra masala aside in a plate.


Step 5

Heat the same wok/kadai add 2-3 tbsp oil. Then place all your brinjals in it. Keep flame to low-medium. Cover and let it cook.


After 2-3 minutes, turn the brinjals, again cover and cook till oil oozes out in masala.



Then add 1 cup of hot boiling water. Cover and let brinjals cook covered for 5 mins.


Now add the remaining extra masala on top properly spread. Cook covered for another 5 mins till you feel that the brinjals are cooked. 


Off the flame and your delicious stuffed brinjals with prawns dish is ready. 


Keep it standby without disturbing for atleast 15-20 mins for flavours to get mixed up properly. 

Serve hot with rice or chapati.

Note: In step 1, I have mentioned approximate quantity of prawns. You can add more. Also you can add small sized prawns or chop big size prawns into small pieces and add, choice is yours☺️
